“Our quality is superior because we’re using fresh stuff that hasn’t been through the ringer,” Olczak said. (Many other brands buy already processed ingredients, such as pepper mash.) He explained how his five employees, including him, clean, chop and freeze hot peppers during the harvest season to extend their ability to produce sauces long after the harvest is over.
