Preparing this Mac & Cheese will always bring you Good Karma!
Prep Time: 20 minutes
Total Time: 35-45 minutes
1 Pound Macaroni (at the Karma kitchen we also use Penne Rigate or Cellentani)
Desired garnishes (optional): chopped peanuts or dukkah, chopped green onions or thin sliced red onions, bread crumbs toasted in butter, chopped fried bacon, etc.
Cheese Sauce Ingredients
4 tbsp Good Karma Sauce®
5 tbsp flour
½ tsp salt
4 tbsp unsalted butter
3 Cups whole milk
12 Oz. shredded extra sharp Cheddar cheese (we prefer Shtayburne or Yancey’s Fancy cheese)
2 tsp Karma Sauce® Chipotle Mustard
1 tsp Worcestershire sauce (optional)
Heat a large saucepan to medium heat (the pan will need to be big enough to contain all of the sauce and pasta). Add butter and flour to the pan. While the mixture cooks, whisk it to form a roux. Continue whisking until the roux reaches a light tan color (approximately 5-10 minutes).
Gradually add the milk to the roux while whisking to avoid lumps. When sauce has thickened, whisk in Good Karma Sauce®, Chipotle Mustard, salt, and Worcestershire sauce (optional)
Reduce heat to low, then stir in cheese.
Prepare the pasta according the instructions on package (for al dente).
When pasta is finished, drain and immediately toss into the sauce. Stir thoroughly to combine pasta and sauce.
Transfer pasta and cheese sauce to platter or plates. Dollop generously with Good Karma Sauce® (or your preferred Karma Sauce®). Add garnishes on top and serve.
